Filipino recipe: Crab with Black Beans
The recipe below is our family's favorite treat. Although it is not a common every day food in every Filipino family, I consider it as of the everyday specials our family serves, because anytime we feel like eating it, we'll include it in the days menu. We use the big Alimango (crab in English) for this recipe, but the smaller ones can also be used. The tausi that the recipe calls for is the canned black beans that can be bought at any Chinese deli. EVERYDAY SPECIALS ALIMANGO WITH TAUSI (CRAB WITH BLACK BEANS) Ingredients: 3-large fat crabs (alimango) 1-small can tausi (black beans) ¼-cup vinegar 2-tablespoons cooking oil ½-cup sliced native onions ¼-cup peeled ginger, sliced into thin strips 1-small head garlic, minced ½-cup sliced ripe tomatoes 2-cups water Salt to taste Procedure: 1. Clean garlic in oil. When it begins to brown add onions and ginger and later, the tomatoes. 2. Simmer about 2 minutes. Add black beans, and the vinegar. 3. Bring to a boil without stirring, and then add crabs with fat removed from the shells. 4. Simmer a few minutes. Add water and cook with lid on. 5. Season according to taste with salt and pepper.
